Chocolate Pots de Crème

Serves 10

INGREDIENTS 
  • Milk, 2%--5 cups
  • Large Egg Yolks--12
  • Bitter Sweet Chocolate-- 41/2 oz.
  • Sugar--7 oz.
 
 
METHOD
 
1) Preheat oven to 325 F.
2) Bring a pot of water to boil for a bain marie. Melt the chocolate in the bain marie.
3) Bring the milk to a simmer.  Then combine the hot milk with the melted chocolate. 
4) Beat the sugar and yolk together in a bowl.
5) Then slowly temper the yolk/ sugar mixture with the milk/chocolate mixture. 
6) Strain the final mixture, let set for about 10 minutes and skim away any foam. 
7) Portion into 6 oz. ceramic or pyrex baking containers and cover each container with aluminum foil. 
8) Bake in a hot water bath for about 50 minutes. 
9) Remove from water bath, uncover and let cool. 
10) Then refrigerate.  Serve with a dollop of whipped cream.
