INGREDIENTS
- 1/2 cup Olive Oil
- 1 medium Onion
- 4 lbs. Ground Chicken Leg & Thigh
- 1/2 cup Chopped Parsley
- 1/2 cup Grated Parmesan Cheese
- 5 Eggs
- 3/4 cup Bread Crumbs
- 3 Bacon Strips
- salt and pepper to taste
DIRECTIONS
- Heat olive oil in medium sauté pan. Add onion and cook until very soft, about 10 minutes. Do not brown. Cool.
- Place chicken in a mixing bowl, add parsley, parmesan, eggs, bread crumbs, salt & pepper.
- Make a small pattie and cook it to taste for seasoning.
- Place mixture on baking sheet pan and mold into a loaf. Top with bacon and cook in a 350 degree oven until the internal temperature is 160 degrees. Approximately 1 hour.
- Serve warm, or cool and refrigerate for sandwiches.
