Chicken Meatloaf

INGREDIENTS
  • 1/2 cup Olive Oil
  • 1 medium Onion
  • 4 lbs. Ground Chicken Leg & Thigh
  • 1/2 cup Chopped Parsley
  • 1/2 cup Grated Parmesan Cheese
  • 5 Eggs
  • 3/4 cup Bread Crumbs
  • 3 Bacon Strips
  • salt and pepper to taste

DIRECTIONS
  1. Heat olive oil in medium sauté pan. Add onion and cook until very soft, about 10 minutes. Do not brown. Cool.
  2. Place chicken in a mixing bowl, add parsley, parmesan, eggs, bread crumbs, salt & pepper.
  3. Make a small pattie and cook it to taste for seasoning.
  4. Place mixture on baking sheet pan and mold into a loaf. Top with bacon and cook in a 350 degree oven until the internal temperature is 160 degrees. Approximately 1 hour.
  5. Serve warm, or cool and refrigerate for sandwiches.
