INGREDIENTS
- 3 Tbs. Olive Oil
- 3 Garlic Cloves, peeled and cut into slivers
- 2 lbs. Tomatoes, peeled and cored
- 1 handful Basil
- Grated Parmesan Cheese, to taste
- 1 lb. Penne Pasta
- Sea Salt, to taste
- Ground Black Pepper, to taste
DIRECTIONS
- Heat 1 to 2 tablespoons of the oil in a pan.
- Saute garlic until it is soft, but not brown.
- Add the tomatoes and some salt and pepper and cook, stirring constantly to prevent tomatoes from sticking as they break up.
- As they cook the tomatoes will release their juices. When the liquid has evaporated, add the remaining olive oil, the basil, and more seasoning if necessary.
- Cook 1 lb. penne pasta as per directions
- Add parmesan cheese
